Might as well get something started about this since I'll be getting a PS3 really just to play this and Street Fighter 4 - both of which are supposedly slated to come out this summer. The place to go for updates about whats currently being tested (HD remix) and how the game has been changed from the original ST is at:

Sirlin posts all the official changes from the capcom blog on his site along with other articles, so you can check either for updates. On sirlin.net, you can filter what posts are displayed by going to the right side of the browser under the "Categories" tab and selecting "Street Fighter HD Remix."
Just another note, I really hope the original ST included with HD Remix is a good port of the arcade version. So far there aren't any good ports of ST since they pretty much all have had problems discovered in them after some tourney (Evo) play. Since Evo2k4, they've been changing the version of ST being used there, from the PS1 anniversary edition, to the dreamcast version, DC, etc. This is another reason why the game is difficult to get into, there isn't a really good port of ST thats being used by everyone.
As far as HD Remix goes... Overall, I'm pretty happy with the changes so far. They are actually really well tested overall because as he mentions most of the tricks and nuances of the game have already been discovered because the game has been played so much.
There are a few links to ST tutorials on his site as well as his book about playing games competitively. Though unfortunately there isn't a lot of information about ST thats easily found. Mostly because its not really a main stream game in the US anymore, but currently the most used emulation of ST is hyper fighter? from the ps2 anniversary edition, I think.
